Pumpkin Soup
10 slices bacon
3 Tbs olive oil
1 onion chopped
2med carrots chopped
2 celery stalks chopped
8 cups water
8 tsp chicken oxo
1 large can pure pumpkin
1 Tbs brown sugar
1 tsp thyme
1 cup heavy cream (or milk)
1/2 tsp nutmeg
3 tsp mild curry powder
1 tsp salt
1/4 tsp pepper
-Cook bacon, crumble + set aside
-In large pot saute onion, celery/ + carrots in alive oil for approx 15 min
-stir in water, oxo, pumpkin, brown sugar, thyme + bacon. B ring to a boil, reduce heat + simmer until veggies are tender
-pour soup in batches into a blender + puree until smooth, --- return to pot
-stir in cream, nutmeg, curry powder + salt + pepper.
